THE PORK TORTA - BUTCHIE PAC
Place 5 to 8 lb. fully cooked smoked picnic shoulder fat side up on rack in shallow roasting pan. Insert meat thermometer so tip is in thickest part of meat and does not touch bone or rest in fat. Bake uncovered in 325 degree oven until done, 25 - 30 minutes per lb., or until thermometer registers 140 degrees.
